Operational Responsibilities
A. Assists the Executive Chef in the daily operation of the Restaurant.
B. Maintains approved Food Quality as directed by the Executive Chef.
C. Suggests new a la Carte Menus and Food Concepts to the Executive Chef
D. Suggest new Banquet Menus to the Executive Chef.
E. Performs other operational duties as directed by the Executive Chef and
takes over the operational duties in the absence of the Executive Chef.
F. Reports any operational shortcoming / problems and accidents directly to
supervisor in charge.
G. To conduct daily operations meeting in the absence of the Exec. Chef
Organizational Responsibilities
H. Follows up with Purchasing with regards to food items still needed.
I. Checks food items upon receiving as directed by Executive Chef.
J. Goes to market if required by Executive Chef to check / canvass food items
availability, quality and prices.
K. Reports to Executive Chef any needed kitchen repairs.
L. In coordination with Executive Chef, maintains cleanliness and hygiene
standards in the kitchen.
Human Resources Responsibilities
L. Maintains harmonious staff relations.
M. Suggests new or additional hiring of staff to Executive Chef.
N. If required is fully involved in the staff training and development.
O. Recommends staff termination and promotions to Executive Chef.
P. Prepares staff evaluations.
Q. Prepares duty roasters as directed by Executive Chef
Financial Responsibilities
R. Follows established recipes and establishes recipes if required.
S. Prepares and updates recipe cards/costing for all food items if required
T. Makes suggestions on how to lower food cost.
Sales and Marketing Responsibilities
U. Makes suggestions on how to lower food cost.
V. Keeps a good customer relationship and entertains complaints and
suggestions in the absence of the Executive Chef
W. Discusses with prospective customers banquet menus or special event
menus and comes up with corresponding suggestions in absence of
Executive Chef.
Communication
X. Directly reports to the Executive Chef
Y. Might be assigned to other duties and responsibilities as required by
Executive Chef.
