Job Description

  • Estimate food preparation amounts and adjust recipes, if required, for the purpose of meeting projected meal requirements and minimizing waste of food items­
  • Direct and coordinate the activities of production employees
  • Plan and establish work schedules, assignments and production sequences to meet production goals
  • Forecast and determine production needs and requirements
  • Develop and implement standard operating procedures and policies; ensure compliance with safety and sanitation regulations
  • Monitor and analyze operations and production records for the purpose of making recommendations for improvements (e.g. weekly expense, COGS, theoretical versus actual food cost)
  • Plans, assigns, and oversees quality control in the preparation and handling
  • Resolve recurring internal and external issues in production; investigate and resolve complaints regarding food quality
  • Conducts daily inspections of all areas of the facility to insure compliance with established standards
  • Performs final food product review and authorization before delivering to clients
  • Manage the procurement of raw materials, supplies and equipment; prepare purchase requests and schedule deliveries/purchase of goods and services to meet production demands
  • Manage receiving and storage of raw materials, equipment and supplies
  • Supervise and participate in the process of inventory; input data into system, and conduct double check counts with staff in all areas
  • Maintain, analyze and report purchasing, receiving and inventory records
  • Review internal purchase requisitions and inventory counts for appropriateness and accuracy
  • Monitor, review, correct, and submit records and reports prepared by subordinate staff
  • Assist in facility maintenance and coordinate the planning and implementation of equipment usage, maintenance, and repairs
  • Fills in when and wherever needed to insure efficient kitchen operation

Minimum Qualifications

  • A graduate of Culinary Arts, Hotel and Restaurant, Nutrition & Dietetics or any equivalent course
  • Experience managing a food production operation or commercial kitchen
  • Has knowledge and experience in:
    • supervision, training, and performance evaluation
    • proper methods and practices of quantity food preparation, and food portion control
    • methods of adjusting and extending recipes and proper substitutions
    • methods and procedures for requisitioning, receiving, and storing of food items and supplies
    • record keeping techniques and inventory procedures
  • Has knowledge in the principles of food safety and sanitation procedures
  • Proficient in Microsoft Excel and recipe management software
