Job Description

Responsible for the development of menus and recipes for the company from the development and trial phase to the execution phase; will train staff on how to produce the recipes.

Job Duties and Responsibilities:

  • Plan, develop, and cost current and new recipes/products
  • Determine finished product and process quality standards
  • Prepare specifications for raw materials, such as food, supplies and equipment
  • Manage and update the recipe and ingredient database
  • Devise new processes or refine existing ones to optimize the production processes
  • Define process, procedures and work instructions
  • Establish and implement food safety standards and compliance with GMP and HACCP; quality assurance policies.
  • Improve yields by reducing costs, such as by researching for alternative raw materials and analyzing bottlenecks in the production process
  • Devise test methods to assess the production process
  • Responsible for training staff on product and process implementation
  • Manage the procurement of raw materials, supplies and equipment; prepare purchase requests and schedule deliveries/purchase of goods and services to meet production demands
  • Prepare and deliver effective and ongoing sanitation training and ensures staff compliance with sanitation standards
  • Modify menu plans according to the clients’ needs
  • Assist in analyzing operations and making recommendations
  • Monitor, review, correct, and submit records and reports
  • Assist in planning and checking quality control in the preparation, handling, and sale of foods as needed
  • Assist in evaluating suppliers and raw materials
  • Assist marketing in launching new products

Minimum Qualifications

  • A graduate of Culinary Arts, Food Technology, Nutrition and Dietetics or any equivalent course
  • Have knowledge and experience in:
    • cooking methods and basic knife cuts
    • recipe standardization and food costing
    • Food-based menu planning, proper food combinations, and economic food substitutes
  • Have knowledge in Principles of:
    • food safety and sanitation procedures
    • research and data collection procedures
  • Proficient in Microsoft Excel and recipe management software
