Job Description

Responsible for supervising the Kitchen Stewards, and for coordinating & supporting kitchen responsibilities with kitchen and back of the house team. Ensures that certain back of the house areas is maintained and that health and safety standards, including standards for all flatware, tableware and kitchen equipment are being followed by the stewards.

GENERAL RESPONSIBILITIES

  1. Manage overall daily operations in the Stewarding Team
  2. Lead and supervise the stewarding team in all aspects of the department and ensure hotel standards are followed
  3. Monitor staffing levels to ensure an adequate amount of staff for business levels and functions Review orders and ensure all set-ups and supplies are in place for each function. Assist any F&B outlets and kitchen team for any kind of resource request
  4. Coordinate daily pot-wash and dish wash responsibilities. Assign work including, but not limited to, assigning machinery, steward equipment, and scheduled work areas
  5. Ensure that correct PPE is in place and hotel guidelines are adhered to
  6. Supervise and maintain the sanitation of kitchen equipment and other assigned areas in accordance with the health code, environmental policies, and hotel standards
  7. Makes routine inspections of all equipment and kitchen areas to ensure that cleanliness and sanitary procedures are maintained. Makes routine inspections of all equipment ensuring that all equipment is in proper mechanical working order
  8. Ensure that all Kitchens are cleaned, organized and sanitized
  9. Ensure consistently high operating standards in steward room in accordance with the hotel brand standards
  10. Ensures that all tasks are completed on time and in accordance with established hotel standards
    • Assigns and delegates tasks to staff
    • Follows up on areas that require attention
    • Communicates standards to staff and ensures compliance
  11. Ensure that garbage & recycling removal is being done in a timely manner and done according to the rules set in place by the hotel and local government
  12. Assist in the correct usage of all chemicals within the department and outlets, including appropriate training
  13. Ensure dishwashing/ware-washing supplies are ordered and controlled
  14. Prepares requisitions related to all cleaning supplies and equipment and monitors supply requisitions to ensure costs are kept to a minimum without losing quality and usage of materials
  15. Maintains the inventory and record keeping for all dinnerware, flatware, and glassware. Orders all china, glass, and silver

Minimum Qualifications

Education: Bachelor’s Degree in Hotel and Restaurant Management; Tourism, or any related course

Work: Minimum of (1) year of experience in Steward Operations as a Team Leader or position in a supervisory capacity, with (2) years line level experience in the Housekeeping or Steward Department; Able to lift loads weighing up to 50lbs, push and pull loads of up to 500lbs

Pre-requisites: Strong leadership abilities, organizational skills, problem-solving skills; Excellent communication skills; Has a keen eye to details; Proficiency, at a basic level, with computers and Microsoft Office; Committed to delivering high levels of customer service; With BOSH Certificate is a PLUS

Location: Willing to be assigned in Davao
