Job Description
- Main responsibility is for all operations at Central Kitchen
- Estimate food consumption and requisition or purchase food
- Select and develop recipes as well as standardize production recipes to ensure consistent quality
- Establish presentation technique and quality standards
- Ensure proper equipment operation/maintenance, and ensure proper safety and sanitation in kitchen
- Ensure consistent food preparation and product
- Coaches and provides leadership to all kitchen staff, ensuring the training and development of staff, providing input for performance, appraisal and disciplinary action
- Monitoring purchase request & delivery schedules
- Create and follow up the Purchase Order
- Support in ordering stocks for daily operations
- Minimize wastage/spoilage
Minimum Qualifications
- Minimal 5 years experience in restaurant or kitchen
- Experience in managing central operation, related in supply chain, logistic or inventory
- Strong planning skills
- Good communication skills
