Job Description
- Develop and contribute dishes that promotes healthy food selection;
- Possess Nutritional Knowledge in developing menu selection;
- Sees to the full implementation of all food & beverage menu programs and ensures that only international quiality standards of service are delivered to the guests;
- Ensures that international standards of service are adhered to at all times in all kitchen and food service;
- Controls Food and Beverage costs to acceptable limits;
- Responsible for the sales and profit targets of the F & B Department;
- Responsible for the optimum production of the kitchen;
- Ensures that most economical level of food and beverage purchase is attained;
- Conduct market survey;
- Prepares/Conducts training propgram for staffs; develops/assists F & B Supervisors in the performance of their job effectively;
- Prepares weekly F & B forecasts & reports;
- Appraises staff performance regulary, gives counseling as required;
- Determines selling prices of all menus and drink with the approval of the Chief Operating Officer.
Minimum Qualifications
- Degree in Hotel and Restaurant Management or Administration, Business Management or Marketing, Food Technology or Dietetics;
- At least four (4) years food and beverage and managerial experience in a service oriented company, preferably in Hotel or restaurant operation;
- Proficient in oral and written communication, MS Office, Internet, and other software application in Food and Beverage like Point of Sales or inventory management;
- Willing to travel out of town or accept rotational or shifting assignment;
- Highly developed skills and knowledge of hotel operation, supervising people, planning, organizing, control, marketing, service excellence, quality management, food & beverage, hygiene, and sanitation, purchasing and HACCP standards;
- Fitness conscious and is into healthy eating.
